This would have to be one of my favourite salads, ever! I get so excited when I have ripe strawberries and avocados I just have to make it.
- Large handful spinach or sorrel
- Handful strawberries, sliced
- Handful chickpeas
- Small handful mint
- 1 small or 1/2 large avocado, diced
- Haloumi, thinly sliced
- 1/2 lemon
Throw the spinach, strawberries, chickpeas, mint and avocado in a bowl.
In a hot pan grill both sides of the haloumi briefly, take it off the heat, slice it and toss it though the salad.
Squeeze the lemon juice over and enjoy immediately.
