I can’t believe how simple and tasty this banana pancake (omelette really) is! It sounds odd, but give it a try, it suits pretty much every diet type except for raw vegans, and I love it for a meal or snack anytime of the day.
- 1 banana
- 1 egg
- Sprinkle of cinnamon
- Fresh fruit, sliced (I love berries or mango)
- Another sprinkling of cinnamon
Using a fork, mash the banana in a small bowl, then stir through the egg and cinnamon.
Cook the omelette on a frypan on low-medium heat.
Serve immediately topped with fresh fruit and sprinkled with cinnamon.
